Classic Egg and Onion Salad
Fundamentally My Egg and Onion Salad is simply egg, mayonnaise and onion, seasoned to my taste. It brings back fond memories from my childhood, days away from home, a cooler box packed with sandwiches, tins of juice, crisps, and the excitement of an excursion or road trip. Nowadays, days out with my family, this is and will always be one of my go-to sandwich filler favorites.
EGG AND ONION SALAD INGREDIENTS
- EGGS: 6 hard boiled eggs. I prefer organic free range. If your lucky enough to have your own eggs, that is better than store bought. Use your own eggs.
- MAYONNAISE: Use you favorite full fat mayo. Yes of course you can cut calories and use reduced fat but why! Its a light lunch meal! Use full fat mayo for its fuller flavour.
- ONION: 1/2 white onion. Again organic or home grown is best. Finely diced, the acid of the onion cuts beautifully the richness of the mayonnaise and egg.
- YELLOW MUSTARD: I use a teaspoon of mild yellow mustard again to cut the richness of the egg mayo and to add flavour. You can use a hotter mustard here if you prefer your flavours a little spicier.
- CHIVES: Chives add a mild onion garlic note to the salad. It also adds contrast to the dish. Eat with you eyes!!
- SALT & PEPPER: Season to taste. Its important to taste, season and taste on this one. Little salt and plenty of white pepper for me. When combined allow the salad to rest in the fridge for as long as you can to allow the flavours to marry and infusre!
- BREAD: This is a personal choice. For me its fresh soft white bread. Italian sub is good too. You have it your way!
SERVING SUGGESTIONS
- SANDWICH FILLER: The simplest way is often the best way. White bread, egg & onion salad filling and a packet of crisps. Done!
- BAKED POTATO TOPPER: Take your favourite floury baked potato, cut open and top with 2 heaped tbsp of egg and onion salad. Add a few slices of smoked bacon to round off the meal.
- SIDE SALAD: A simple side salad to accompany any main meal or salad plate. Burgers, steaks, sauasges, BBQ, game and red meat can be deliciously paired with this decadent salad.
RECIPE
Classic Egg and Onion Salad
Creamy silky egg and onion egg salad
Ingredients
- 6 Large Eggs Free range organic.
- 75 g Mayo
- 1/2 white onion finely diced
- 1 tsp yellow mustard
- 2 tsp Chopped chives
- 1 tsp vinegar
- Salt to taste
- Pepper to taste
Instructions
- Bring a saucepan of water and a tsp vinegar to the boil.
- Add the 6 eggs and boil for 10 min
- Remove to ice bath and allow to chill
- Shell the eggs and fine dice. Add to the onion
- Incorporate the mayo and mustard.
- Mix in the chives for an even distribution
- Taste and season to taste with salt and pepper
