Classic Egg and Onion Salad

Creamy silky egg and onion egg salad

Ingredients
  

  • 6 Large Eggs Free range organic.
  • 75 g Mayo
  • 1/2 white onion finely diced
  • 1 tsp yellow mustard
  • 2 tsp Chopped chives
  • 1 tsp vinegar
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Bring a saucepan of water and a tsp vinegar to the boil.
  • Add the 6 eggs and boil for 10 min
  • Remove to ice bath and allow to chill
  • Shell the eggs and fine dice. Add to the onion
  • Incorporate the mayo and mustard.
  • Mix in the chives for an even distribution
  • Taste and season to taste with salt and pepper
