Classic Egg and Onion Salad
Creamy silky egg and onion egg salad

- 6 Large Eggs Free range organic.
- 75 g Mayo
- 1/2 white onion finely diced
- 1 tsp yellow mustard
- 2 tsp Chopped chives
- 1 tsp vinegar
- Salt to taste
- Pepper to taste
Bring a saucepan of water and a tsp vinegar to the boil.
Add the 6 eggs and boil for 10 min
Remove to ice bath and allow to chill
Shell the eggs and fine dice. Add to the onion
Incorporate the mayo and mustard.
Mix in the chives for an even distribution
Taste and season to taste with salt and pepper
