Deli Style Irish Stuffed Sausage Olives

The Irish stuffed sausage olive is a take on a simplified Sunday classic of stuffed roast pork. This three ingredient, simple lunch is a deli favorite in Northern Ireland. Pork sausages split and stuffed with a savory sage and onion stuffing, encapsulated with smoked streaky bacon. Perfect as a snack, side, lunch and great for picnics.

STUFFED SAUSAGE OLIVE INGREDIENTS

  • SAUSAGES: 8 of you favorite sausages are needed for this recipe. I lucky to have a great local butcher who create their own pork and leek sausages. Using the best quality ingredients will enhance a simple meal like this more than any amount of seasoning! Use premium quality sausages for best results.
  • SAGE AND ONION STUFFING: This is a quick cheat recipe so I’m using 300g of my favorite store bought savory sage and onion stuffing to stuff the sausages.
  • SMOKED BACON: Bacon should be sold as a condiment. There is no meal it doesn’t improve!! I used smoked, streaky, thin sliced bacon for this recipe. I’ve tried this recipe with other cuts and types of bacon and streaky bacon had the best results and flavor for me.
  • MILK: Milk is used here to bind the stuffing together and add a little moisture. Use enough just to bring the stuffing mixture together. Some home made stuffings use eggs etc and may hold with out the milk. Consider milk as optional.

SERVING SUGGESTIONS

  • ON ITS OWN: The simplest way is often the best way. Sauce it up with hot sauce, red sauce, mustard, however you want it! It is a savory treat straight out of the oven or fridge. I enjoy this hot and cold once cooked!!
  • AS A SIDE: Serve along with a herb and leafy salad as a light lunch or a meat accompaniment with something like my wild mushroom risotto.
  • SANDWICH FILLER: Carve and spread it on your favorite slice of loaf, topped with a few sliced pickles and creamy mayonnaise coleslaw for a satisfying decadent filled stuffed pork sandwich.
  • MAIN EVENT: A take on a simplified Sunday classic of stuffed roast pork. Take a few stuffed sausage olives and pair it with my savory Yorkshire puddings and rich onion gravy for a delicious main meal.

RECIPE

Stuffed Sausage Olives

The Irish stuffed sausage olive is a take on a simplified Sunday classic of stuffed roast pork. Pork sausages split and stuffed with a savory sage and onion stuffing, encapsulated with smoked streaky bacon. Perfect as a snack, side, lunch and great for picnics.

Ingredients
  

  • 8 pork and leek sausages or your favorite
  • 16 rashers of streaky bacon
  • 300 g sage and onion stuffing
  • 100 ml whole milk Enough to bring together the stuffing.

Instructions
 

  • Preheat oven to Gas 6
  • Slice the sausages in half without cutting through and flatten out slightly
  • Take the sage and onion stuffing and add the milk. Bring together and portion into 8
  • Take a stuffing ball and roll into a small log, Take a flattened sausage and form it around the stuffing portion.
  • Take 2 rashers of bacon and wrap around the stuffed sausage to form the olive.
  • Arrange the 8 olives onto a tray and roast in oven for 25 min
  • Enjoy

Notes

Make into a main meal with my Yorkshire puddings and a simple onion gravy. One wont be enough!!!
