The Best Creamy, Spicy, Chicken And Chorizo Sausage Tagliatelle

Creamy chilli spiced chicken and smokey chorizo sausage bits make this bowl of pasta an ultimate comfort food! A rich creamy decadent spicy sauce, bursts of sun-dried tomato, crispy bites of savory chorizo sausage and succulent chicken all coszied up through ribbons of velvety tagliatelle.

SPICY CHICKEN & CHORIZO TAGLIATELLE INGREDIENTS

  • TAGLIAELLE: Use you favorite pasta brand and cook as per instructions
  • REAP SEED OIL: Use the best you can source. Olive oil is good as well.
  • BUTTER: Salted or unsalted butter to saute off the onions.
  • SUN-DRIED TOMATOES: I used a main brand preserved in oil. Use the oil as well to enrich the sauces’ flavor profile.
  • TOMATO PUREE
  • SWEET CHILLI SAUCE: use your favorite brand. I prefer a sauce with a bit more of a chilli kick!
  • SMOKED PAPRIKA
  • CAYENNE PEPPER
  • HOT CHILLI POWDER
  • DOUBLE CREAM: double cream adds the luxurious richness to the sauce. Feel free to swap out with a lighter whipping cream.
  • CHORIZO SAUSAGE: Most food stores stock chorizo sausage nowadays in some shape or form. I prefer mine smoked for an extra depth of flavor.
  • RED ONION: Organic red onion
  • CHICKEN BREAST: Organic free range is best
  • GARLIC: fresh crushed or minced
  • PARMASAN: finely grated is used as a binder and seasoning in the sauce.
  • PARSLEY: Fresh and finely chopped
  • CHICKEN STOCK: no need to be fancy here. A stock cube works.
  • LEMON JUICE: Fresh squeezed is best.
  • HOMEMADE CHILLI PICKLED RED ONION: My chilli pickled red onion adds another level of heat and a complexity to the sauce. Find the recipe here.

Spicy Chicken and Chorizo Sausage Tagliatelle

A hearty, filling, sweet and spicy, creamy pasta dish that will warm the lips and keep you going.

Ingredients
  

  • 200 g Tagliatelle
  • 2 tbsp reap seed oil
  • 1 tbsp butter
  • 60 g sun-dried tomato fine diced
  • 2 tbsp tomato puree
  • 3 tbsp sweet chilli sauce
  • 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp hot chilli powder
  • 160 ml double cream
  • 40 g chorizo sausage fine diced
  • 1 medium red onion fine diced
  • 2 chicken breasts medium diced
  • 1 tbsp garlic crushed
  • 30 g Parmesan grated
  • 2 tbsp fresh parsley chopped
  • 200 ml chicken stock
  • 1 tsp lemon juice
  • 20 g chilli pickled red onion

Instructions
 

  • Over medium high heat, add oil, diced chicken and diced chorizo sausage. Cook through and set aside.
  • In the same pan add butter and soften the diced red onion for 3 minute.
  • Over medium-high heat, add the tagliatelle to a pot of salted boiled water.
  • Add the garlic, chilli powder, sun-dried tomatoes, tomato puree, cayenne pepper, smoked paprika, sweet chilli sauce and chilli pickle. Reduce down to a paste consistency.
  • Deglaze pan with chicken stock
  • With the pan off the heat add the cream.
  • Add the chicken and chorizo sausage and warm through.
  • Add lemon juice, Parmesan, parsley and season to taste.
  • Add the cooked pasta and coat in the spicy sauce. Loosen the sauce with pasta water if necessary.
  • Enjoy

Notes

A side of garlic bread and a glass of white wine is the perfect accompaniment.
