Fifteens Traybake

Traybakes are a traditional Northern Irish sweet and there is nothing more delicious than the classic Fifteens. Fifteens are made popular through the generations due to the fact they are one of the first recipes introduced to children in Home Economics education. This recipe is simple and requires no baking. The name is derived from the fact that you use exactly fifteen of each individual component to create this sweet, moreish treat.

Fifteens have a firm but delicate texture, jeweled with candied cherries and soft marshmallow. It is nothing but sweet indulgence.

FIFTEENS TRAYBAKE INGREDIENTS

  • DIGESTIVE BISCUIT: Crushed digestives give this sweet its moreish body. You can experiment with other biscuits but traditionally wholemeal digestives are used.
  • MARSHMALLOWS: Pink and white marshmallows are quartered. Top tip: Once quartered, toss the marshmallow in the biscuit crumb to prevent them clumping together.
  • CANDIED CHERRIES: Glacé cherries are sweet and add texture. quarter and toss in the crumb to prevent them clumping.
  • CONDENSED MILK: Binds and sets all the ingredients for this . Get all the dry ingredients prepared and combined first before incorporating the condensed milk.
  • DESICCATED COCONUT: For flavour and texture.

RECIPE

Fifteens Traybake

The classic Northern Irish traybake. Digestive biscuits, glacé cherries, marshmallows, condensed milk and coconut.

Refrigerate 2 hours

Equipment

  • 5 litre bowl
  • Parchment paper

Ingredients
  

  • 200 g condensed milk
  • 15 pink and white marshmallows quartered
  • 15 digestive biscuits crushed
  • 15 Glacé cherries quartered
  • 20 g dessicated coconut

Instructions
 

  • Take a 5 litre bowl and pour in the crushed biscuits, quartered glacé cherries, quartered marshmallows and condensed milk and combine.
  • Line the tray with parchment paper.
  • Using the back of a spoon, press and compact the mixture into the tray to form an even layer.
  • Sprinkle the top of the mixture with the desiccated coconut
  • Refrigerate the traybake for a minimum of 2 hours to set.
  • Cut into bite size pieces.

Notes

Doubling this recipe gives me 24 sweets from a 150 mm x 200 mm tin.
