Perfect Breakfast Pancakes
My Perfect Breakfast Pancakes are a great way to start the morning. They are made using everyday ingredients, brought together to create light, fluffy, pancakes.
PANCAKE INGREDIENTS
- PLAIN FLOUR: Plain all purpose flour is used to create the pancake batter. You can use self-raising flour of course. Just leave out the baking powder from the recipe.
- BAKING POWDER: Helps rise the batter creating a fluffier pancake.
- BAKING SODA: Reacts with the buttermilk to create a fluffier pancake.
- EGG: Free range eggs are best. They enrich and bind the ingredients to form the batter.
- BUTTERMILK: Adds acidity and reacts with the baking soda to create airiness in the pancakes.
- CASTER SUGAR: Balances the acidity of the buttermilk and sweetens the pancake slightly, but not too much.
- BUTTER: Full fat butter used for flavour and moistness.
- VANILLA EXTRACT: Use your favorite brand. Always use extract, never essence as essence is usually synthetic.
- SALT: Enhances the sweetness
SERVING SUGGESTIONS
Besides the obvious bacon and maple syrup and lemon and sugar, here are a few ideas for you next pancake breakfast:
SAUSAGE, BACON AND EGG: Grilled sausage, bacon and a runny egg is a perfect combination between two large breakfast pancakes.
HAM AND CHEESE: You could also try butchers sliced crumbed ham or thick cut boiled ham, melted Gruyere cheese, sprinkled with sliced spring onion
STRAWBERRIES AND CREAM: A firm favourite in summer, try some fresh sliced strawberries and Chantilly cream spread over pancakes and drizzled with a rich chocolate sauce.
RECIPE
Perfect Breakfast Pancakes
Ingredients
- 220 g plain flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 egg large
- 250 ml buttermilk
- 2 tbsp caster sugar
- 30 g butter melted
- 1/4 tsp salt
- 1.5 tsp vanilla extract
Instructions
- Sift the flour, sugar, salt, baking power and baking soda into a large bowl.
- Beat the egg and combine with the buttermilk and vanilla extract.
- Incorporate the wet and dry ingredients together.
- Melt the butter and whisk into the batter
- Heat a pan or flat skillet over medium low heat and lightly butter the base.
- Ladle the batter onto the skittle into pancake portions and spread slightly. After a few minutes, check the underside for color and flip. A minute more and they are done.
