Perfect Breakfast Pancakes
Light, soft, simple homemade pancakes. A family favorite.

- 220 g plain flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 egg large
- 250 ml buttermilk
- 2 tbsp caster sugar
- 30 g butter melted
- 1/4 tsp salt
- 1.5 tsp vanilla extract
Sift the flour, sugar, salt, baking power and baking soda into a large bowl.
Beat the egg and combine with the buttermilk and vanilla extract.
Incorporate the wet and dry ingredients together.
Melt the butter and whisk into the batter
Heat a pan or flat skillet over medium low heat and lightly butter the base.
Ladle the batter onto the skittle into pancake portions and spread slightly. After a few minutes, check the underside for color and flip. A minute more and they are done.
