Perfect Breakfast Pancakes

Light, soft, simple homemade pancakes. A family favorite.

Ingredients
  

  • 220 g plain flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 egg large
  • 250 ml buttermilk
  • 2 tbsp caster sugar
  • 30 g butter melted
  • 1/4 tsp salt
  • 1.5 tsp vanilla extract

Instructions
 

  • Sift the flour, sugar, salt, baking power and baking soda into a large bowl.
  • Beat the egg and combine with the buttermilk and vanilla extract.
  • Incorporate the wet and dry ingredients together.
  • Melt the butter and whisk into the batter
  • Heat a pan or flat skillet over medium low heat and lightly butter the base.
  • Ladle the batter onto the skittle into pancake portions and spread slightly. After a few minutes, check the underside for color and flip. A minute more and they are done.
