My Savoury Pork Sausage Rolls
My Savoury Pork Sausage Rolls are simply the best sausage rolls, lightly seasoned with sage and onion . They are full of flavour and are so simple to create. Succulent pork and savoury herbs perfectly compliment each other, all warped up in a flaky, buttery puff pastry jacket.
This recipe will make eight normal sausage rolls or twenty four cocktail sausage rolls. They are great for light lunches, parties or buffets. A simple, great tasting, savory treat that is sure to impress.
PORK SAUSAGE ROLLS INGREDIENTS
- PUFF PASTRY: The quality of some store bought pastry is second to none and is a real time saver, perfect for quick, simple recipes like this.
- MINCED PORK: Get the best minced pork you can, i prefer an 80/20 meat to fat ratio. This creates a more succulent and flavourful sausage meat that isn’t too dry.
- BREADCRUMBS: Home made or store bought is good. The breadcrumb absorbs fat and helps retain moisture.
- GARLIC: Crushed or minced organic garlic for flavour.
- HERBS: A selection of savoury herbs to infuse the meat include: sage, time, marjoram and oregano.
- SEASONING: Salt and pepper
- ONION: Finely diced or puree onion adds flavour and moisture. I have used an organic white onion.
- MUSTARD: Dijon mustard has a sweet and spicy sour flavour that compliments meats very well and brings a balance to these rolls. You can of course substitute your preferred mustard of choice here.
- SESAME SEEDS: Used for decoration and add a unique flavour to the sausage roll when roasted.
- AN EGG: Free range organic egg used for egg washing and sealing the pastry.
RECIPE
Savoury Pork Sausage Rolls
Pork meat infused with herbs create a flavoursome sausage roll.
Equipment
- Large mixing bowl
- Pastry brush
Ingredients
- 400 g Minced Pork
- 1 garlic clove
- 1 tbsp sage
- 1/2 tsp thyme
- 1/2 tsp marjoram
- 1/2 tsp oregano
- 1 free range egg
- 80 g bread crumbs
- 1/2 tsp salt
- 1/2 tsp white pepper
- 2 tbsp sesame seeds
- 3 tbsp finely diced onion
- 2 tbsp Dijon mustard
- 1 roll of puff pastry
Instructions
- Remove the puff pastry from the fridge and allow to come up to room temperature.
- Preheat oven to Gas 5.
- In a large bowl, mix together the breadcrumbs, minced garlic, herbs, salt and pepper.
- Add the minced pork, Dijon mustard and finely diced onion.
- Using your hands, massage the mixture together to form a meaty paste that will hold together.
- Roll out the puff pastry on a clean counter-top and cut in half length-ways into two even rectangles.
- Take the meat mixture and roll into two even logs and place along the long edge of the pastry sheets.
- With a pastry brush, egg wash the opposite long edge of the pastry and fold shut to create the sausage roll. Use a fork to crimp the edge after.
- Egg wash the pastry and sprinkle with sesame seeds.
- Cut each roll to your length of choice which will depend on if you want cocktail, normal or jumbo sausage rolls. This recipe will create 8 normal sausage rolls or 24 cocktails.
- Bake for 25-30 min until golden brown.
