Crispy Chicken Fillet
- 2 chicken breasts
- 250 ml buttermilk
- 200 g plain flour
- 100 g cornflour
- 1 tbsp cayenne pepper powder
- 1 tbsp ginger powder
- 1 tbsp onion powder
- 1 tbsp white pepper
- 1 tsp salt
Place chicken between two sheets of clingfilm and tenderize/flatten with a rolling pin to about half an inch or 12mm
Marinade the chicken in the buttermilk for a minimum of 30 min.
In a bowl, add all the dry ingredients and spices and whisk to incorporate.
Set your deep fat fryer to 190 degC.
Take the chicken once marinaded and toss in the bowl of seasoned flour. Return to the butter milk and toss in the flour a final time.
Place into your fryer at 190 degC and fry for 3 to 4 minutes per side until golden.
